Ingredients
- – 1 bay leaf (2.5 ml)
- – 1 onion
- – 4 cloves garlic
- – 1 inch piece of ginger
- – 1 teaspoon vegetable oil (5 ml)
- – 1/2 teaspoon vegetable oil (2.5 ml)
- – 2 diced carrots (about 2 cups or 300 g)
- – 2 cups diced celery (1 cm cubes or 180 g)
- – 1 1/2 teaspoons (8 ml) Italian seasoning (or 1/2 teaspoon (3 ml) each of basil, oregano, and thyme)
- – 1/4 teaspoon (1 ml) red chili flakes
- – 3 cups low sodium vegetable or chicken stock or water (720 ml)
- – 2 tablespoons lemon juice (30 ml)
- – 1/2 teaspoon (3 ml) black pepper
- – a few fresh celery leaves
- – a few fresh thyme leaves or parsley (optional)
Instructions
- Dice the onion into fine pieces. Grate the garlic cloves and ginger.
- Warm up vegetable oil in a large pot over medium heat.
- Sauté the bay leaf and onions until the onions become translucent.
- Mix in the ginger and garlic, cooking them for a couple of minutes.
- Introduce the chopped carrots and celery to the pot, stirring occasionally for about 5 minutes.
- Incorporate Italian seasoning and sprinkle in the red chili flakes.
- Pour in the stock or water, bringing everything to a boil.
- Once boiling, lower the heat and let it simmer for about 10 minutes until the vegetables soften.
- Remove two cups of the soup and allow it to cool slightly.
- Blend the cooled soup until smooth, then return it to the pot.
- Simmer for an additional 5 minutes to combine flavors.
- Turn off the heat and stir in the lemon juice and black pepper.
- Season with additional salt if needed, then remove the bay leaf from the pot.
- Lightly oil a large pan and fry some celery leaves on low heat until they become crispy.
- Dish out the soup into bowls, topping with the crispy celery leaves and optional fresh herbs for garnish.
