Ingredients

  • – 1 bay leaf (2.5 ml)
  • – 1 onion
  • – 4 cloves garlic
  • – 1 inch piece of ginger
  • – 1 teaspoon vegetable oil (5 ml)
  • – 1/2 teaspoon vegetable oil (2.5 ml)
  • – 2 diced carrots (about 2 cups or 300 g)
  • – 2 cups diced celery (1 cm cubes or 180 g)
  • – 1 1/2 teaspoons (8 ml) Italian seasoning (or 1/2 teaspoon (3 ml) each of basil, oregano, and thyme)
  • – 1/4 teaspoon (1 ml) red chili flakes
  • – 3 cups low sodium vegetable or chicken stock or water (720 ml)
  • – 2 tablespoons lemon juice (30 ml)
  • – 1/2 teaspoon (3 ml) black pepper
  • – a few fresh celery leaves
  • – a few fresh thyme leaves or parsley (optional)


Instructions

  1. Dice the onion into fine pieces. Grate the garlic cloves and ginger.
  2. Warm up vegetable oil in a large pot over medium heat.
  3. Sauté the bay leaf and onions until the onions become translucent.
  4. Mix in the ginger and garlic, cooking them for a couple of minutes.
  5. Introduce the chopped carrots and celery to the pot, stirring occasionally for about 5 minutes.
  6. Incorporate Italian seasoning and sprinkle in the red chili flakes.
  7. Pour in the stock or water, bringing everything to a boil.
  8. Once boiling, lower the heat and let it simmer for about 10 minutes until the vegetables soften.
  9. Remove two cups of the soup and allow it to cool slightly.
  10. Blend the cooled soup until smooth, then return it to the pot.
  11. Simmer for an additional 5 minutes to combine flavors.
  12. Turn off the heat and stir in the lemon juice and black pepper.
  13. Season with additional salt if needed, then remove the bay leaf from the pot.
  14. Lightly oil a large pan and fry some celery leaves on low heat until they become crispy.
  15. Dish out the soup into bowls, topping with the crispy celery leaves and optional fresh herbs for garnish.

  • Consider sautéing diced carrots and celery for richer flavor before adding to the pot.
