Ingredients
- – 1 cup (240 ml) chocolate chips, I use semisweet
- – 1/2 cup (120 ml) heavy whipping cream, for melting chocolate chips
- – 2/3 cup (160 ml) chilled heavy whipping cream, for whipping
- – 1-2 tablespoons (23 ml) powdered sugar
- – 1/4 teaspoon (1 ml) pure vanilla extract, optional, use it if you have it
Instructions
- Place the chocolate chips and ½ cup of cream in a large bowl and heat until the chocolate is completely melted and the mixture is smooth. I recommend using the microwave in 20-second intervals, stirring thoroughly between each interval. Allow the mixture to cool to room temperature, stirring occasionally, which should take about 15 minutes.
- In a separate bowl, use a hand mixer or stand mixer with a whisk attachment to whip ⅔ cup of chilled cream with the powdered sugar and vanilla extract until the mixture forms stiff peaks. (If you want extra whipped cream for topping, see the note.) Place the whipped cream in the refrigerator until the chocolate mixture reaches room temperature.
- Combine the whipped cream with the cooled chocolate mixture by gently folding them together using a rubber or silicone spatula. Once they are fully mixed, spoon the mousse into individual serving cups. Refrigerate for a minimum of 2 hours to allow it to firm up. If you prefer a softer texture, leave it at room temperature for approximately 15 minutes before serving.
