Ingredients

  • 4 chicken thighs, bone-in, skin-on, 2 pounds (907g)
  • 1 medium onion, chopped, about 1 cup (240ml)
  • 3 celery ribs, chopped, about 2 cups (480ml)
  • 3 medium carrots, chopped, about 1 ½ cups (360ml)
  • 1 large yellow bell pepper, chopped
  • 2 medium russet potatoes (1 pound), peeled and cut into ¾-inch cubes (454g)
  • 4 cloves garlic, chopped
  • 1 (14.5 oz (411 g)) can no-salt diced tomatoes
  • 2 dry bay leaves
  • 1 Tbsp (15 ml). salt
  • 1 (32 oz (907 g)) carton low-sodium chicken stock
  • 4 cups water (or chicken stock) (960ml)
  • ½ cup dry ditalini pasta (120g)
  • 1/2 cup (120 ml) fresh chopped Italian parsley
  • Fresh black pepper, to taste


Instructions

  1. In a pot that holds at least six quarts, place the chicken thighs along with the onion, celery, carrots, yellow bell pepper, potatoes, garlic, canned tomatoes, bay leaves, and salt.
  2. Pour in the chicken stock and water, then add black pepper according to your preference. Cover the pot and bring the mixture to a boil.
  3. Lower the heat to a gentle simmer, leaving the lid slightly ajar, and cook for about 30 minutes, or until the chicken is tender and easily separates from the bone. Use tongs to take the chicken out of the pot.
  4. Introduce the pasta into the soup and let it cook for 13 to 15 minutes with the lid slightly open, stirring a few times to prevent the pasta from sticking.
  5. While the pasta cooks, use two forks to shred the chicken, discarding the skin and bones, then place the shredded chicken back into the pot. At this stage, the soup should nearly be complete. Check the vegetables, particularly the potatoes, to ensure they are cooked through.
  6. Remove the bay leaves from the pot. Mix in the chopped parsley and serve hot.
