Ingredients
- 4 cups (960 ml) water
- 1 tbsp (15 ml) dried bonito
- 1 anchovy soup stock packet
- 2 tbsp (30 ml) light soy sauce
- 2 tbsp (30 ml) fruit juice
- 450 grams udon noodles
- 6 vegetable tempura
- 6 slices fish cake

- green onions
Instructions
- Combine the dried bonito, anchovy soup packet, light soy sauce, and fruit juice with 4 cups of water in a small saucepan. Heat until it begins to simmer and let it gently cook for 10 minutes, covering it with a lid.
- Prepare the udon noodles following the instructions on the package, then drain and set them aside.
- Cut the fish cake into slices and warm up the vegetable tempura.
- Split the udon, broth (removing the packet), fish cake, and vegetable tempura into two separate bowls. Sprinkle with shichimi togarashi and chopped green onions before serving.
Notes
- For a more flavorful broth, allow it to simmer for an extra 5-10 minutes before serving.
