Ingredients

  • 4 cups (960 ml) water
  • 1 tbsp (15 ml) dried bonito
  • 1 anchovy soup stock packet
  • 2 tbsp (30 ml) light soy sauce
  • 2 tbsp (30 ml) fruit juice
  • 450 grams udon noodles
  • 6 vegetable tempura
  • 6 slices fish cake
  • shichimi togarashi
  • green onions


Instructions

  1. Combine the dried bonito, anchovy soup packet, light soy sauce, and fruit juice with 4 cups of water in a small saucepan. Heat until it begins to simmer and let it gently cook for 10 minutes, covering it with a lid.
  2. Prepare the udon noodles following the instructions on the package, then drain and set them aside.
  3. Cut the fish cake into slices and warm up the vegetable tempura.
  4. Split the udon, broth (removing the packet), fish cake, and vegetable tempura into two separate bowls. Sprinkle with shichimi togarashi and chopped green onions before serving.

Notes

  • For a more flavorful broth, allow it to simmer for an extra 5-10 minutes before serving.
