Ingredients

  • – 10 ounces (283 g) dry spaghetti (can also use linguine or fettuccine)
  • – 3/4 cup (180 ml) basil pesto
  • – 1 pound (454 g) medium to large shrimp, peeled and deveined
  • – 1 tablespoon (15 ml) olive oil
  • – 1 teaspoon (5 ml) Italian seasoning (or equal parts garlic powder, dried basil, and dried oregano)
  • – salt and pepper to taste
  • – 1/4 cup (30 g) grated Parmesan cheese
  • – 1 cup (150 g) cherry tomatoes, halved
  • – Optional garnish: chopped parsley


Instructions

  1. Fill a large pot with water, add salt, and bring it to a boil. Cook the pasta following the instructions on the packaging.
  2. As the pasta cooks, start preparing the shrimp.
  3. In a large skillet, warm up the olive oil over high heat. Toss the shrimp into the skillet, seasoning them with Italian seasoning, salt, and pepper.
  4. Cook the shrimp for 2-4 minutes, or until they turn pink and opaque, then turn off the heat.
  5. Once the pasta is ready, drain it and combine it with the shrimp in the skillet. Mix in the pesto.
  6. Incorporate the cherry tomatoes and Parmesan cheese into the mixture. Optionally, sprinkle chopped parsley on top for garnish.
