Ingredients
- – 10 ounces (283 g) dry spaghetti (can also use linguine or fettuccine)
- – 3/4 cup (180 ml) basil pesto
- – 1 pound (454 g) medium to large shrimp, peeled and deveined
- – 1 tablespoon (15 ml) olive oil
- – 1 teaspoon (5 ml) Italian seasoning (or equal parts garlic powder, dried basil, and dried oregano)
- – salt and pepper to taste
- – 1/4 cup (30 g) grated Parmesan cheese
- – 1 cup (150 g) cherry tomatoes, halved
- – Optional garnish: chopped parsley
Instructions
- Fill a large pot with water, add salt, and bring it to a boil. Cook the pasta following the instructions on the packaging.
- As the pasta cooks, start preparing the shrimp.
- In a large skillet, warm up the olive oil over high heat. Toss the shrimp into the skillet, seasoning them with Italian seasoning, salt, and pepper.
- Cook the shrimp for 2-4 minutes, or until they turn pink and opaque, then turn off the heat.
- Once the pasta is ready, drain it and combine it with the shrimp in the skillet. Mix in the pesto.
- Incorporate the cherry tomatoes and Parmesan cheese into the mixture. Optionally, sprinkle chopped parsley on top for garnish.
