  • 1 (20 oz (567 g)) package refrigerated cheese tortellini
  • 2 tbsp (30 ml) unsalted butter
  • 4 cloves garlic, minced
  • 2 tbsp (30 ml) all-purpose flour
  • 2 cups (480 ml) heavy cream
  • 1 cup (240 ml) whole milk
  • 1 cup (240 ml) grated beef-friendly cheese
  • 1 1/2 cups (360 ml) shredded beef-friendly cheese, divided
  • 1 tsp (5 ml) Italian seasoning
  • 1/4 tsp (1 ml) crushed red pepper flakes (optional)
  • 2 tbsp (30 ml) chopped fresh parsley (for garnish)
  • Non-stick cooking spray or butter (for greasing the casserole dish)


Instructions

  1. **Preparation:**
  2. Step 1: Cook the Tortellini
  3. Start by bringing a large pot of salted water to a boil. Once boiling, add the cheese tortellini and follow the cooking directions on the package, typically 3-5 minutes. Drain and put them aside, ensuring they’re not overcooked, as they’ll continue cooking in the oven.
  4. Step 2: Prepare and Cook the Shrimp
  5. While the tortellini cooks, coat the shrimp with olive oil, garlic powder, onion powder, salt, and pepper. In a large skillet over medium heat, cook the shrimp for 2–3 minutes on each side, or until they turn pink and opaque. Take them off the heat and set aside.
  6. Step 3: Create the Alfredo Sauce
  7. Using the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about one minute until it’s aromatic. Stir in the flour and cook for another minute to form a roux. Gradually add the heavy cream and milk, whisking continuously to avoid lumps.
