Ingredients

  • 1 (454 g) package lasagna noodles (16 oz)
  • 1 (283 g) package frozen chopped spinach (10 oz)
  • 3 cooked, boneless chicken breast halves, diced
  • 2 (454 g) jars creamy pasta sauce (16 oz)
  • 2 pints ricotta cheese (946 ml)
  • 4 cups shredded mozzarella cheese (448 g)
  • salt and ground black pepper to taste


Instructions

  1. Set your oven to a temperature of 350 degrees F (175 degrees C).
  2. Fill a large pot with water, add a pinch of salt, and bring to a boil. Drop in the lasagna noodles and cook them until they are cooked through but still firm, around 8 to 10 minutes, then drain.
  3. Combine the frozen spinach with 1/2 cup water in a 2-quart nonstick pan and bring to a boil. Lower the heat to medium-high, cover the pan, and cook, stirring from time to time, until the spinach is soft, about 6 to 7 minutes. Drain and press out any extra moisture.
  4. In a medium bowl, blend the chicken with one jar of Alfredo sauce until thoroughly mixed.
  5. In a separate medium bowl, combine the ricotta cheese with the spinach until they are well incorporated.
  6. Layer a 9×13-inch baking dish with a single layer of lasagna noodles, allowing the edges to overlap. Evenly spread the chicken and Alfredo sauce mixture over the noodles. Sprinkle 1 cup of mozzarella cheese on top. Add another noodle layer. Evenly spread the ricotta-spinach mixture on the noodles. Pour half of the remaining Alfredo sauce over the spinach mix and spread it out. Sprinkle another cup of mozzarella cheese. Add a final layer of noodles and top with the rest of the Alfredo sauce and 2 cups of mozzarella cheese. Season with salt and pepper.
  7. Place in the preheated oven and bake until the top is golden and bubbly, about 50 to 60 minutes.
