Description

Delicious and convenient sheet pan breakfast quesadillas filled with eggs, cheese, sausage, and fresh vegetables, perfect for busy mornings or weekend brunches.


Ingredients

  • 8 large flour tortillas
  • 8 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cooked and crumbled breakfast sausage or bacon
  • 1 bell pepper, diced
  • 1 onion, diced
  • Salt and pepper to taste
  • Cooking spray or oil


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spray a large baking sheet with cooking spray or lightly oil it.
  3. In a large bowl, whisk together the eggs, salt, and pepper.
  4. Stir in the cooked sausage or bacon, diced bell pepper, diced onion, and shredded cheese.
  5. Lay four tortillas on the baking sheet.
  6. Spoon the egg mixture evenly over the tortillas.
  7. Top with the remaining tortillas, gently pressing down.
  8. Bake for 15-20 minutes, or until the tortillas are golden and the eggs are set.
  9. Cut into wedges and serve warm.

Notes

For a gluten-free option, try using corn tortillas. You can also prepare the egg mixture the night before for a quicker assembly in the morning.
