Delicious and convenient sheet pan breakfast quesadillas filled with eggs, cheese, sausage, and fresh vegetables, perfect for busy mornings or weekend brunches.
Ingredients
- 8 large flour tortillas
- 8 large eggs
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup cooked and crumbled breakfast sausage or bacon
- 1 bell pepper, diced
- 1 onion, diced
- Salt and pepper to taste
- Cooking spray or oil
Instructions
- Preheat your oven to 400°F (200°C).
- Spray a large baking sheet with cooking spray or lightly oil it.
- In a large bowl, whisk together the eggs, salt, and pepper.
- Stir in the cooked sausage or bacon, diced bell pepper, diced onion, and shredded cheese.
- Lay four tortillas on the baking sheet.
- Spoon the egg mixture evenly over the tortillas.
- Top with the remaining tortillas, gently pressing down.
- Bake for 15-20 minutes, or until the tortillas are golden and the eggs are set.
- Cut into wedges and serve warm.
Notes
For a gluten-free option, try using corn tortillas. You can also prepare the egg mixture the night before for a quicker assembly in the morning.
