A heartwarming stew combining savory cabbage, ground meat, and tender potatoes, perfect for cozy nights at home.


Ingredients

  • ½1 piece of savoy cabbage
  • 500 g ground meat
  • 1 small red onion, chopped
  • 1-2 cloves of garlic, sliced
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 500 g potatoes, chopped
  • 1 can (400 g) chopped tomatoes
  • 1.5 liters vegetable broth
  • Olive oil for sautéing
  • Salt and pepper to taste
  • Crème fraîche, preferably with herbs, for serving


Instructions

  1. Prepare the savoy cabbage by removing the outer leaves, slicing in half, and quartering, then cut out the fibrous center and create thin strips.
  2. Heat olive oil in a large pot, add ground meat, and brown until crumbled and golden.
  3. Add the chopped red onion and cook until translucent.
  4. Stir in the tomato paste and allow it to caramelize slightly.
  5. Gradually incorporate the savoy cabbage, letting it wilt before adding more.
  6. Add the chopped potatoes and sliced garlic to the pot.
  7. Pour in the canned tomatoes and enough vegetable broth to cover the ingredients.
  8. Bring to a simmer and cook for 25-40 minutes until the potatoes are tender.
  9. Season to taste with additional salt and pepper.
  10. Finish by adding crème fraîche before serving.

Notes

For a twist, add fresh herbs like thyme or rosemary. Adjust broth quantity for desired consistency.
