Ingredients

  • 4 medium chicken breasts (about 900g)
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour (30g)
  • 2 tablespoons (30 ml) olive oil, divided
  • 1 tablespoon (15 ml) beef butter
  • 1/2 cup (120 ml) jarred roasted red peppers (sliced into strips)
  • 1-1/2 cups (120 ml) fresh baby spinach
  • 3 cloves garlic, minced
  • 4 slices beef mozzarella cheese


Instructions

  1. Dry the chicken breasts with a paper towel and slice each one horizontally about two-thirds of the way through. Sprinkle with salt and pepper, then coat each piece in flour, removing any excess.
  2. In a large ovenproof pan, warm 1 tablespoon of olive oil and the beef butter over medium-high heat until it shimmers. Cook the chicken on both sides for 2-3 minutes each until they achieve a golden hue. Remove from the pan and set aside on a plate.
  3. Using the same pan, over medium-high heat, cook the roasted red peppers and spinach in the remaining tablespoon of olive oil until the spinach wilts, around 3-5 minutes. Stir in minced garlic and cook for another minute until you can smell the aroma. Season with salt and pepper as preferred. Move the mixture to a small bowl.
  4. Place the chicken back in the pan off the heat. Stuff each breast with a slice of mozzarella cheese and the red pepper-spinach mixture, securing with toothpicks. Bake at 375°F for 20-25 minutes, or until the chicken’s internal temperature reaches 165°F. Remove toothpicks before serving and enjoy!
