Description

Delicious bite-sized breakfast delights filled with sausage, cheddar, and chives, perfect for brunch or a quick snack.


Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 cup cooked and crumbled breakfast sausage
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped chives
  • Maple syrup, for serving (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Beat the egg in a separate bowl, then whisk in the buttermilk and melted butter until well combined.
  4. Pour the wet ingredients into the dry ingredients. Stir just until combined, being careful not to overmix.
  5. Fold in the crumbled sausage, shredded cheese, and chopped chives gently.
  6. Spoon the batter evenly into the prepared mini muffin tin, filling each cup about 3/4 full.
  7. Bake for 12-15 minutes or until the tops are golden and a toothpick inserted into the center of a muffin comes out clean.
  8. Remove from the oven and let cool in the pan for 5 minutes before transferring the bites to a wire rack to cool completely.
  9. Serve warm with maple syrup for dipping, if desired.
