Description

A hearty breakfast hash featuring crispy potatoes, eggs, bacon, and sautéed vegetables, perfect for breakfast or brunch.


Ingredients

  • 2 large Potatoes, diced
  • 4 large Eggs
  • 4 strips Bacon, chopped
  • 1 medium Onion, diced
  • 1 Bell Pepper, diced
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons Olive Oil


Instructions

  1. Dice the potatoes and cook them in a skillet with olive oil until crispy.
  2. Add diced onion and bell peppers, cooking until softened.
  3. Cook bacon in a separate pan until crispy, then chop and add to the potato mixture.
  4. Create wells in the hash and crack eggs into them.
  5. Cover the skillet and cook until eggs are set.
  6. Season with salt and pepper, then serve warm.
