Ingredients
- 2 large Potatoes, diced
- 4 large Eggs
- 4 strips Bacon, chopped
- 1 medium Onion, diced
- 1 Bell Pepper, diced
- Salt, to taste
- Pepper, to taste
- 2 tablespoons Olive Oil
Instructions
- Dice the potatoes and cook them in a skillet with olive oil until crispy.
- Add diced onion and bell peppers, cooking until softened.
- Cook bacon in a separate pan until crispy, then chop and add to the potato mixture.
- Create wells in the hash and crack eggs into them.
- Cover the skillet and cook until eggs are set.
- Season with salt and pepper, then serve warm.
