Ingredients
- 1 cup all-purpose flour
- 1½ cups milk
- 2 large eggs
- 2 tablespoons melted butter
- ¼ teaspoon salt
- 4 scrambled eggs
- 1 cup fresh or sautéed spinach
- 1 cup shredded cheddar cheese
- ½ cup diced tomatoes
- 2 tablespoons chopped chives
Instructions
- Combine flour, milk, eggs, melted butter, and salt in a blender or large bowl; blend until smooth.
- Allow the batter to rest for at least 30 minutes.
- Grease your skillet lightly with butter or cooking spray.
- Pour ¼ cup of batter into the pan, tilting immediately to spread thin.
- Cook for 1-2 minutes until the edges lift, then flip and cook for another minute.
- Transfer the finished crepe to a plate, stacking them with parchment paper in between.
- Fill each crepe with scrambled eggs, sautéed spinach, shredded cheese, and diced tomatoes. Fold or roll gently.
- Sprinkle with chopped chives and serve warm.
