Description

Delicious, fluffy muffins filled with sharp cheddar cheese and crispy bacon, perfect for breakfast or brunch.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Combine flour, baking powder, salt, and black pepper in a mixing bowl.
  3. Whisk together milk, oil, and egg in another bowl.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Fold in the shredded cheese and crumbled bacon.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Let cool slightly before serving.
