Ingredients
- 2 medium zucchini, sliced
- 1 cup mushrooms, sliced
- 1 medium onion, chopped
- 3 cloves garlic, chopped
- 1 teaspoon fresh thyme (or dried if unavailable)
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Slice the zucchini and mushrooms, and chop the onion and garlic.
- In a large skillet, heat olive oil over medium heat.
- Add the onions and sauté until translucent.
- Add the garlic and thyme, and cook until fragrant.
- Stir in the zucchini and mushrooms, cooking until tender.
- Season with salt and pepper to taste.
- Serve warm as a side dish.
Notes
For extra flavor, consider adding red pepper flakes or substituting thyme with fresh basil or oregano.
