  • 1 pound (454 g) ground beef
  • 4 cups (946 ml) milk
  • 3 cups (710 ml) cubed potatoes
  • 2 cups (473 ml) vegetable broth
  • 2 cups (473 ml) coconut milk
  • 1 medium onion, chopped
  • 1/2 teaspoon (3 ml) dried oregano
  • 1/2 teaspoon (3 ml) red pepper flakes, or more to taste
  • 1/2 teaspoon (3 ml) ground black pepper
  • 2 cups (140 g) kale, torn into bite-sized pieces


Instructions

  1. Start by assembling all the ingredients.
  2. Place a large pot on the stove over medium-high heat. Add the ground beef, breaking it apart as it cooks, until it is browned, which should take around 10 minutes. Remove the excess fat.
  3. Combine the milk, potatoes, vegetable broth, coconut milk, onion, oregano, and red pepper flakes with the beef in the pot. Bring the mixture to a boil. Lower the heat and let it gently cook until the potatoes are soft, approximately 30 minutes.
  4. Add black pepper for seasoning. Mix in the kale and continue cooking until the kale is tender, about 10 to 15 minutes more.
