- 1 pound (454 g) ground beef
- 4 cups (946 ml) milk
- 3 cups (710 ml) cubed potatoes
- 2 cups (473 ml) vegetable broth
- 2 cups (473 ml) coconut milk
- 1 medium onion, chopped
- 1/2 teaspoon (3 ml) dried oregano
- 1/2 teaspoon (3 ml) red pepper flakes, or more to taste
- 1/2 teaspoon (3 ml) ground black pepper
- 2 cups (140 g) kale, torn into bite-sized pieces
Instructions
- Start by assembling all the ingredients.
- Place a large pot on the stove over medium-high heat. Add the ground beef, breaking it apart as it cooks, until it is browned, which should take around 10 minutes. Remove the excess fat.
- Combine the milk, potatoes, vegetable broth, coconut milk, onion, oregano, and red pepper flakes with the beef in the pot. Bring the mixture to a boil. Lower the heat and let it gently cook until the potatoes are soft, approximately 30 minutes.
- Add black pepper for seasoning. Mix in the kale and continue cooking until the kale is tender, about 10 to 15 minutes more.
