Ingredients

  • 14 ounce (397 g) s mild Italian chicken sausage
  • 1/2 medium yellow onion, chopped
  • 1 cup (240 ml) frozen corn kernels
  • 1 cup (240 ml) dry orzo
  • 3 cup (720 ml) s low sodium chicken broth
  • 3 cup (720 ml) s packed baby spinach
  • 1/4 cup (60 ml) freshly grated parmesan
  • Freshly ground black pepper


Instructions

  1. Take the sausage out of its casing and place it in a thick-bottomed pot or Dutch oven.
  2. Cook on medium-high for 5 minutes, using a wooden spoon to crumble it.
  3. Add the chopped onion and frozen corn, and sauté for 10 minutes.
  4. Mix in the orzo and chicken broth, stir well, and let it come to a boil.
  5. Lower the heat to medium-low and let it gently simmer for 10 minutes, stirring occasionally to prevent the orzo from sticking to the pot.
  6. Take the pot off the heat, add the spinach, stir, and cover for a couple of minutes until the spinach wilts.
  7. Sprinkle with freshly grated parmesan and black pepper to your liking, then serve.

Notes

  • For a lighter option, use turkey sausage instead of chicken sausage.
  • Swap frozen corn for fresh corn for a sweeter taste and crunchier texture.
  • Experiment with different cheeses like asiago or pecorino for a unique flavor twist.
