Ingredients
- 14 ounce (397 g) s mild Italian chicken sausage
- 1/2 medium yellow onion, chopped
- 1 cup (240 ml) frozen corn kernels
- 1 cup (240 ml) dry orzo
- 3 cup (720 ml) s low sodium chicken broth
- 3 cup (720 ml) s packed baby spinach
- 1/4 cup (60 ml) freshly grated parmesan
- Freshly ground black pepper
Instructions
- Take the sausage out of its casing and place it in a thick-bottomed pot or Dutch oven.
- Cook on medium-high for 5 minutes, using a wooden spoon to crumble it.
- Add the chopped onion and frozen corn, and sauté for 10 minutes.
- Mix in the orzo and chicken broth, stir well, and let it come to a boil.
- Lower the heat to medium-low and let it gently simmer for 10 minutes, stirring occasionally to prevent the orzo from sticking to the pot.
- Take the pot off the heat, add the spinach, stir, and cover for a couple of minutes until the spinach wilts.
- Sprinkle with freshly grated parmesan and black pepper to your liking, then serve.
