Ingredients

  • – 6 green peppers (900g)
  • – 1 pound ground beef (450g)
  • – 1 pound (454 g) beef sausage
  • – 1 teaspoon (5 ml) seasoned salt
  • – 1/2 teaspoon (3 ml) freshly ground pepper
  • – 1 teaspoon (5 ml) minced onion or 1/2 cup (120 ml) freshly chopped onion
  • – 1 1/2 cups shredded cheddar cheese (170g) (Colby can be substituted)
  • – 4 ounces cream cheese, softened (113g)
  • – 1/4 cup grated plant-based parmesan cheese (25g)
  • – 2 cups shredded plant-based mozzarella cheese (225g)


Instructions

  1. Set your oven to 400°F and lightly coat a 9×13 baking dish along with an 8×8 square dish with oil or cooking spray.
  2. Cook the beef and sausage in a pan until browned, then remove any excess fat.
  3. Rinse, deseed, and slice the green peppers in half lengthwise.
  4. Combine the cooked meat with the seasonings, softened cream cheese, and shredded cheddar until well mixed.
  5. Fill each pepper half with the meat mixture, then cover and bake for 15 minutes.
  6. Sprinkle the grated plant-based parmesan and mozzarella over the peppers and continue baking without a cover for an additional 5 to 10 minutes until the cheese is bubbly and the peppers are as tender as you like.
