Ingredients
- – 6 green peppers (900g)
- – 1 pound ground beef (450g)
- – 1 pound (454 g) beef sausage
- – 1 teaspoon (5 ml) seasoned salt
- – 1/2 teaspoon (3 ml) freshly ground pepper
- – 1 teaspoon (5 ml) minced onion or 1/2 cup (120 ml) freshly chopped onion
- – 1 1/2 cups shredded cheddar cheese (170g) (Colby can be substituted)
- – 4 ounces cream cheese, softened (113g)
- – 1/4 cup grated plant-based parmesan cheese (25g)
- – 2 cups shredded plant-based mozzarella cheese (225g)
Instructions
- Set your oven to 400°F and lightly coat a 9×13 baking dish along with an 8×8 square dish with oil or cooking spray.
- Cook the beef and sausage in a pan until browned, then remove any excess fat.
- Rinse, deseed, and slice the green peppers in half lengthwise.
- Combine the cooked meat with the seasonings, softened cream cheese, and shredded cheddar until well mixed.
- Fill each pepper half with the meat mixture, then cover and bake for 15 minutes.
- Sprinkle the grated plant-based parmesan and mozzarella over the peppers and continue baking without a cover for an additional 5 to 10 minutes until the cheese is bubbly and the peppers are as tender as you like.
