A delightful same-day sourdough focaccia with a crispy crust and soft interior, perfect for sharing with family and friends.
Ingredients
- 500g all-purpose flour
- 350ml water
- 100g sourdough starter
- 10g salt
- 2 tablespoons olive oil
- Fresh rosemary (to taste)
- Sea salt (for topping)
Instructions
- In a large bowl, mix the flour, water, and sourdough starter until combined.
- Add salt and olive oil, and mix until a smooth dough forms.
- Cover the bowl with a damp cloth and let it rest for 1-2 hours, or until it doubles in size.
- Preheat the oven to 220°C (430°F).
- Grease a baking tray with olive oil and pour the dough into it.
- Use your fingers to stretch and dimple the dough.
- Top with fresh rosemary and sprinkle sea salt over the top.
- Bake for 20-25 minutes, or until golden brown.
- Remove from oven and let cool before slicing.
Notes
Use fresh herbs like rosemary for flavor, and consider topping with olives or cherry tomatoes for variety. Store leftover focaccia wrapped in a kitchen towel or freeze for longer storage.
