Ingredients

  • – 12 tablespoons (170g) unsalted butter cut into Tablespoon-sized pieces
  • – ½ cup (85g) semisweet chocolate chips
  • – ½ cup (50g) natural cocoa powder
  • – 1/2 teaspoon (3 ml) instant coffee grounds
  • – 1 cup (200g) packed light brown sugar
  • – ½ cup (100g) granulated sugar
  • – 2 large eggs
  • – 1 large egg yolk
  • – 1 teaspoon (5 ml) vanilla extract
  • – 1 cup (140g) all-purpose flour
  • – 2 tablespoons (20g) all-purpose flour
  • – 1/2 teaspoon (3 ml) baking powder
  • – 1/2 teaspoon (3 ml) salt
  • – 35 unwrapped caramels
  • – ½ cup (115ml) heavy cream
  • – fine sea salt for sprinkling


Instructions

  1. Set your oven to 350°F (175°C) and apply baking spray to a 24-slot mini muffin pan. Place aside.
  2. In a large, microwave-safe container, combine the butter pieces and chocolate chips. Heat for 30 seconds, stir thoroughly, and then heat for another 15 seconds. Stir well and repeat for 15-second intervals until the mixture is smooth and fully blended.
  3. Mix in the cocoa powder, coffee grounds, packed brown sugar, and granulated sugar. Add the two eggs, the extra egg yolk, and the vanilla extract, then mix vigorously.
  4. In another medium bowl, combine the flour, extra flour, baking powder, and salt, whisking together.
  5. Incorporate the dry flour mixture into the wet egg mixture and stir until everything is well-mixed. Spoon 1 1/2 tablespoons of batter into each section of the prepared muffin tin.
  6. Bake for about 18 minutes, checking with a toothpick that should come out with dry crumbs or just slightly fudgy (not with wet batter).
  7. Once baked, use a teaspoon or tablespoon to press a hollow into each brownie bite. Let them cool down as you make the caramel filling.
  8. To create the caramel filling, melt the caramels with the heavy cream in a saucepan over medium-low heat, stirring often until smooth. Remove from heat once blended.
  9. Drizzle the melted caramel into each brownie bite’s hollow.
  10. Dust with sea salt and let them cool entirely before enjoying.
