Ingredients
- – 1 ½ pounds (680 g) wild caught salmon
- – 1 avocado, sliced
- – 1 cucumber, peeled and sliced
- – 3 green onions, sliced
- – 4 sheets nori, cut into strips
- – sesame seeds for garnish (optional)
- – sushi rice
- – sriracha aioli
- – soy ginger dressing
- – 2 cups (380 g) short grain white sushi rice
- – 3 cups (720 ml) water
- – 2 tablespoons (30 ml) rice vinegar
- – 1 tablespoon (15 ml) sugar
- – 1/2 tablespoon (8 ml) salt
- – 1/2 cup (120 ml) soy sauce
- – 1/4 cup (60 ml) rice vinegar
- – 2 teaspoons (10 ml) sugar
- – 1 teaspoon (5 ml) sesame oil
- – 1-2 tablespoons (23 ml) fresh grated ginger root
- – 3 garlic cloves, minced
- – 1/2 cup (120 ml) high quality mayonnaise
- – 1-2 tablespoons (23 ml) sriracha to desired spiciness
Instructions
- Cook the salmon as directed on the packaging, or if unpackaged, place on a baking tray and roast at 425°F for 20-30 minutes until thoroughly cooked.
- For the Sushi Rice, rinse it until the water is clear. Combine with water in a medium pot, stir occasionally as the water heats to a boil. Once boiling, cover and lower the heat to a simmer. Let it cook for approximately 20 minutes or until the water is absorbed and the rice is tender. Let it cool slightly.
- In a small bowl, combine rice vinegar, sugar, and salt. Heat this mixture in the microwave for about 30 seconds and stir until the sugar and salt fully dissolve. Pour this over the rice and mix well.
- To make the sriracha aioli, blend the mayonnaise with sriracha and set it aside.
- For the soy ginger dressing, mix together soy sauce, rice vinegar, sugar, sesame oil, ginger, and garlic, whisking until the sugar is dissolved. Set aside.
- To put together the Salmon Sushi Bowls, place sushi rice in a serving bowl. Add a serving of salmon, along with slices of avocado and cucumber, green onion, and a few strips of nori. Drizzle with the sriracha aioli and soy ginger dressing. Optionally, sprinkle with sesame seeds for garnish.
