Ingredients
- 1 cup (240 ml) jasmine rice
- 1 3/4 cups (415 ml) water
- 1 bunch kale, de-stemmed and chopped
- 1 head romaine, chopped
- 1 pound (450 g) beef filet
- 1 1/2 teaspoons (8 ml) paprika
- 1/2 teaspoon (3 ml) smoked paprika
- 1/2 teaspoon (3 ml) chili powder
- 1/2 teaspoon (3 ml) garlic powder
- 1/2 teaspoon (3 ml) onion powder
- 1/4 teaspoon (1 ml) salt
- 1/4 teaspoon (1 ml) pepper
- 1 tablespoon (15 ml) olive oil
- 2 tablespoons (30 ml) chopped Italian flat leaf parsley
- 2 cloves garlic, chopped
- 3 tablespoons (45 ml) plain Greek yogurt
- 1 teaspoon (5 ml) prepared horseradish
- 2 teaspoons (10 ml) Worcestershire sauce
- 2 tablespoons (30 ml) freshly grated Parmesan cheese, plus extra for serving
- Juice of 2 lemons
- 1/3 cup (80 ml) olive oil
- 1/4 teaspoon (1 ml) salt
- 1/4 teaspoon (1 ml) pepper
Instructions
- In a medium pot, bring the water to a boil and add a generous pinch of salt. When it reaches a rolling boil, pour in the rice, give it a stir, and cover. Lower the heat to medium-low and allow it to cook for 20 minutes. Turn off the heat and let it rest for 10 minutes before uncovering.
- Prepare the dressing by placing garlic, Greek yogurt, horseradish, Worcestershire sauce, Parmesan cheese, lemon juice, olive oil, salt, and pepper in a food processor. Blend until you achieve a creamy consistency.
- Put the kale into a big bowl and pour a third of the dressing over it. Use your fingers to massage the leaves until they become tender and absorb the flavors. Mix in the romaine and toss everything together.
- In a small bowl, mix together paprika, smoked paprika, chili powder, garlic powder, salt, and pepper. Coat the beef filet thoroughly with this spice blend, pressing it firmly to ensure it sticks. Heat a large pan over medium-high heat and add the olive oil. Once the oil is hot, place the beef in the pan and sear for 4-5 minutes on each side, depending on the thickness, until it is cooked through.
- To assemble, arrange the kale and romaine in serving bowls, add a portion of rice, top with the beef, drizzle with the Caesar dressing, and finish with a sprinkle of Parmesan cheese and chopped parsley. Serve immediately!
