Description

Discover how to make a hearty Rustic Beef Stew with Carrots & Potatoes that will warm your soul. This comforting recipe is perfect for cozy nights in.

Ingredients

  • 1 kg beef (2.2 lbs)
  • 3 medium carrots
  • 3 medium potatoes
  • 1 onion
  • 8 cloves garlic
  • 2 stalks celery
  • 1 tsp (5 ml) paprika
  • 3 dried bay leaves
  • slurry mixture
  • 2-3 cups beef broth or water (480-720 ml)
  • 1-1/2 tsp (3 ml) salt
  • 1/2 tsp (3 ml) black pepper
  • 1/2 tbsp (8 ml) sugar or seasoning granules
  • 2 tbsp (30 ml) cooking oil
  • freshly chopped parsley for garnish

Instructions

  1. Slice the beef into cubes or chunks and put them aside.
  2. Peel and chop all required vegetables and spices into pieces.
  3. Warm 2 tablespoons of cooking oil in a pan or wok, add the garlic, and sauté until fragrant, then include the chopped onion and sauté further.
  4. Introduce the beef pieces, stirring and cooking for a minimum of 2 minutes until they change color. Next, pour in the beef broth, add half a tablespoon of salt, and the bay leaves. Allow the mixture to boil and then simmer until the beef is soft.
  5. Once the beef is tender, incorporate the carrots, potatoes, and celery, along with salt and black pepper. Add sugar to adjust the flavor, or you can use seasoning granules if preferred. Stir and let it cook for 8 to 10 minutes.
  6. Combine 1 tablespoon of cornstarch with 2 tablespoons of water to make a slurry. Just before finishing, add the slurry to the pot, stir, and cook for an additional minute.
  7. Take the stew off the heat and transfer it to a serving bowl.
  8. Optionally, sprinkle with freshly chopped parsley before serving. Enjoy the meal with others.

Notes

  • Use beef broth instead of water while simmering the beef for a richer flavor.
  • Adjust the seasoning with more salt, pepper, or sugar to suit your taste.
  • Cook the stew until the beef is tender before adding the vegetables for even cooking.
