Description

Ingredients

  • 2 pints (950 ml) cherry or grape tomatoes
  • 1/4 cup (60 ml) olive oil
  • 4 cloves garlic, sliced
  • 3 sprigs fresh thyme
  • Pinch of crushed red pepper flakes
  • Salt and black pepper, to taste
  • 8 oz (227 g) mozzarella cheese
  • 2 to 3 tablespoons (38 ml) basil pesto
  • Fresh basil and crushed red pepper flakes, for garnish
  • Toasted bread or pasta, for serving


Instructions

  1. Preheat the oven to 400°F.
  2. Place the cherry or grape tomatoes in a 9×13-inch baking dish. Pour olive oil over them and mix well to ensure they are fully coated. Add sliced garlic, fresh thyme sprigs, a pinch of crushed red pepper flakes, along with salt and black pepper.
  3. Bake the tomatoes for 30 to 35 minutes until they start to burst. Take the dish out of the oven.
  4. Tear the mozzarella cheese and spread it over the hot roasted tomatoes. Drizzle basil pesto on top of the tomatoes and cheese. Optionally, sprinkle some fresh basil and crushed red pepper flakes for extra flavor. Serve without delay alongside toasted bread or pasta.

  • For a more flavorful dish, opt for cherry tomatoes over grape tomatoes.
  • Enhance the taste by adding extra garlic as desired.
  • Choose fresh mozzarella for a smoother consistency.
