Ingredients

  • 2 1/4 lbs (1 kg) Roma tomatoes, halved lengthwise
  • 1 1/4 lbs (567 g) grape tomatoes or cherry tomatoes
  • 4 1/2 Tbsp (67 ml) vegetable oil, divided
  • Salt and black pepper
  • 8 cloves garlic, peeled and left whole
  • 2 small yellow onions, sliced just under 1/2-inch thick
  • 1 1/2 cups (26 g) lightly packed fresh basil, divided
  • 5 cups (1.2 L) low-sodium vegetable broth
  • Prepared grilled cheese or grilled cheese croutons (optional), see notes


Instructions

  1. Set your oven to 425°F. Arrange the tomatoes on a baking tray with raised edges, coat them with 3 tablespoons of vegetable oil, and sprinkle with salt and pepper (ensure the Roma halves are placed with the cut side facing up).
  2. Position the onion slices and garlic cloves on another tray, brush all over with the remaining 1 1/2 tablespoons of vegetable oil, and season with salt and pepper.
  3. Put both trays into the oven, roasting the garlic for about 15 minutes or until it turns a light golden color, then take it out. Continue roasting the onions for 30 to 35 minutes until their edges turn golden brown, and remove them. Let the tomatoes roast for 40 to 45 minutes until they achieve a slight browning.
  4. Transfer the roasted tomatoes, onions, and garlic into a large cooking pot. Pour in the vegetable broth and add roughly three-quarters of the basil. Adjust the seasoning with salt and pepper according to your preference.
  5. Bring the mixture to a vigorous simmer, cover it, and lower the heat to maintain a gentle simmer for 20 minutes.
  6. Use an immersion blender to puree the soup, or blend it in small portions using a standard blender (ensuring to fill only halfway and remove the center cap, covering the opening with a towel). Serve the soup warm, garnished with the remaining basil after chopping it.
