Ingredients
- 6 potatoes, peeled and cut into 1-inch (2.5 cm) pieces
- 2 tablespoons (30 ml) vegetable oil, divided
- 5 teaspoon (3 ml) ground black pepper
- 1 onion, chopped
- 6 cloves garlic, peeled
- 3 cups (720 ml) beef broth
- 1 cup (240 ml) water
- 1 cup (240 ml) coconut milk
- salt to taste
Instructions
- Set your oven to a temperature of 425°F (220°C).
- Arrange the potato pieces in a low-sided baking dish, then pour 1 tablespoon of vegetable oil over them. Add a sprinkle of black pepper and toss to ensure they’re well-coated. Roast for 25 minutes or until they achieve a golden-brown color. Set aside 1 cup of these roasted potatoes for later use.
- In a large saucepan, warm the remaining oil and cook the chopped onion for 5 minutes. Add the potatoes and peeled garlic, then pour in the beef broth and water. Bring this to a rolling boil, then lower the heat and let it simmer without a lid for 20 minutes.
- Transfer half of this broth mixture to a blender and blend until it’s almost smooth. Repeat the process with the rest of the mixture, then combine everything back in the pot. Mix in the coconut milk and add salt according to your taste. Serve the soup in bowls and garnish each with the reserved roasted potatoes.
