Ingredients
- – 2 Bell peppers, halved, seeds removed (360g)
- – 2 tbsp (30ml) vegetable oil
- – 1 cup (240g) ricotta cheese or farmer’s cheese
- – 1 cup (120g) beef cheese, shredded
- – 2-3 garlic cloves, minced
- – salt and black pepper to taste
- – pinch red chili flakes
- – 1 egg
- – 1 tbsp (15ml) Fresh basil for serving
Instructions
- ■ Heat the oven to 400 degrees Fahrenheit. Arrange the halved peppers on a baking tray and coat both sides with vegetable oil.
- ■ Place the peppers in the oven and roast them for 15 minutes.
- ■ In a bowl, thoroughly combine all the filling ingredients until smooth and well mixed.
- ■ Stuff the peppers with the prepared filling.
- ■ Return the filled peppers to the oven and bake for another 30 minutes, or until the tops are nicely browned and the cheese is bubbling.
- ■ Garnish with fresh basil before serving.
