Ingredients

  • – 2 Bell peppers, halved, seeds removed (360g)
  • – 2 tbsp (30ml) vegetable oil
  • – 1 cup (240g) ricotta cheese or farmer’s cheese
  • – 1 cup (120g) beef cheese, shredded
  • – 2-3 garlic cloves, minced
  • – salt and black pepper to taste
  • – pinch red chili flakes
  • – 1 egg
  • – 1 tbsp (15ml) Fresh basil for serving


Instructions

  1. ■ Heat the oven to 400 degrees Fahrenheit. Arrange the halved peppers on a baking tray and coat both sides with vegetable oil.
  2. ■ Place the peppers in the oven and roast them for 15 minutes.
  3. ■ In a bowl, thoroughly combine all the filling ingredients until smooth and well mixed.
  4. ■ Stuff the peppers with the prepared filling.
  5. ■ Return the filled peppers to the oven and bake for another 30 minutes, or until the tops are nicely browned and the cheese is bubbling.
  6. ■ Garnish with fresh basil before serving.
