Description

Delightful cookies combining crunchy Rice Krispies with rich chocolate chips, perfect for family gatherings.

Ingredients

  • 2 cups Rice Krispies cereal
  • 1 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 cup mini chocolate chips
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, salt, and baking soda. Set aside.
  3. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually mix in the flour mixture until just combined.
  6. Fold in the Rice Krispies cereal and chocolate chips.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes until the edges are golden brown and the centers are set.
  9. Cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, chill the dough for 30 minutes before baking. Use fresh Rice Krispies for maximum crunch.
