Description
A simple and flavorful Mexican rice dish made easily in a rice cooker, perfect as a side for various entrees.
Ingredients
- 2 cups long-grain rice
- 1 can (15 oz) tomato sauce
- 2 cups chicken or vegetable broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt, to taste
- 1 tablespoon olive oil
- Chopped cilantro for garnish (optional)
Instructions
- Rinse the rice under cold water until the water runs clear.
- In the rice cooker, combine the rinsed rice, tomato sauce, broth, cumin, chili powder, garlic powder, salt, and olive oil.
- Stir to mix everything together.
- Close the lid and cook according to the rice cooker’s instructions until the rice is fluffy and the liquid is absorbed, about 20-30 minutes.
- Once cooked, let it sit for 5 minutes before fluffing with a fork.
- Garnish with chopped cilantro, if desired, and serve warm alongside tacos, fajitas, or grilled meats.
Notes
Let the rice rest before fluffing for better texture. Adjust spices for more heat if desired.
