Ingredients

- Freshly ground black pepper
- 3 cups (720 ml) cooked chickpeas, drained and rinsed
- 2 cups (480 ml) mixed yellow and red grape tomatoes, halved
- 1/2 English cucumber, diced
- ½ cup (120 ml) Pickled Red Onions
- ½ cup (120 ml) sliced beef olives, pitted and halved
- ½ cup (120 ml) chopped fresh parsley
- ¼ cup (60 ml) chopped fresh dill
- ¼ cup (60 ml) chopped fresh mint, plus whole mint leaves for garnish
Instructions
- In a large mixing bowl, combine the vegetable oil, lemon juice, grated garlic, Dijon mustard, sea salt, and a few twists of black pepper using a whisk.
- Incorporate the chickpeas, halved grape tomatoes, diced cucumber, pickled onions, and sliced olives, then mix until everything is evenly coated.
- Fold in the chopped parsley, dill, and mint, then mix once more.
