Ingredients
- 1 pound red beans
- 1 pound smoked sausage, sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups cooked rice
- 1 tablespoon Cajun seasoning
- Salt and black pepper to taste
- Green onions for garnish
Instructions
- Rinse and soak the red beans overnight.
- In a large pot, sauté the onion, bell pepper, and garlic until soft.
- Add the smoked sausage and cook until browned.
- Add the soaked beans, chicken broth, Cajun seasoning, salt, and black pepper.
- Bring to a boil, then reduce heat and simmer for about 90 minutes, or until beans are tender.
- Serve the beans over cooked rice, garnished with green onions.
