Description

A hearty bowl of red beans and rice brings together rich flavors and comforting textures, perfect for family gatherings.


Ingredients

  • 1 pound red beans
  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups cooked rice
  • 1 tablespoon Cajun seasoning
  • Salt and black pepper to taste
  • Green onions for garnish


Instructions

  1. Rinse and soak the red beans overnight.
  2. In a large pot, sauté the onion, bell pepper, and garlic until soft.
  3. Add the smoked sausage and cook until browned.
  4. Add the soaked beans, chicken broth, Cajun seasoning, salt, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for about 90 minutes, or until beans are tender.
