Ingredients
- 3 large carrots, peeled and ends trimmed
- 1 tablespoon olive oil
- 1 tablespoon fresh lime juice
- 1 teaspoon apple cider vinegar
- 1 teaspoon agave syrup
- 1/2 teaspoon ground coriander
- 1/8 teaspoon cayenne pepper (optional)
- 1/4 teaspoon kosher salt
- 2 tablespoons chopped parsley
- 2 teaspoons sesame seeds
- Optional: 1 tablespoon chopped cilantro or mint
Instructions
- Prep the carrots: Grate or julienne the peeled carrots, ensuring they remain in uniform sizes for even mixing and presentation.
- Make the dressing: In a mixing bowl, blend olive oil, lime juice, apple cider vinegar, agave, ground coriander, and kosher salt. If you prefer a little heat, stir in the cayenne pepper.
- Mix: In a large bowl, toss the carrots with the dressing until they coat evenly. Add chopped parsley and sesame seeds, stirring to combine thoroughly. If using, sprinkle chopped cilantro or mint on top.
