Ingredients
- 1 tablespoon (15 ml) vegetable oil
- 1 small sweet onion, diced
- 3 garlic cloves, minced
- kosher salt and pepper
- ½ teaspoon (2.5 ml) dried basil
- ½ teaspoon (2.5 ml) dried oregano
- 6 tablespoons (90 ml) tomato paste
- 1 tablespoon (15 ml) apple cider vinegar
- 4 cups (960 ml) vegetable or chicken stock
- 12 ounces (340 g) your favorite frozen ravioli, (or fresh!) – I like cheese ravioli for this
- 3 tablespoons (45 g) nutritional yeast, plus more for topping
- chopped fresh parsley, for topping
Instructions
- Warm the vegetable oil in a large pot over medium-low heat. Add the diced onion and minced garlic, seasoning with a pinch of kosher salt and pepper. Sauté until the onion becomes soft and clear, around 3 to 4 minutes.
- Mix in the dried basil, oregano, and tomato paste. Continue stirring as the paste cooks and its color darkens slightly, enhancing its flavor. Pour in the apple cider vinegar to deglaze the pan.
- Pour in the vegetable or chicken stock and stir. Increase the heat to bring it to a boil, then lower to a simmer. Introduce the ravioli and cook according to package instructions—typically about 5 minutes for frozen ravioli, and slightly less for fresh.
- Incorporate the nutritional yeast into the soup. Serve immediately, garnishing with extra nutritional yeast and chopped fresh parsley.
- Note: If preparing in advance or for meal prep, cook the ravioli separately and store it away from the broth in the refrigerator. Combine them in a bowl and heat up when ready to enjoy!
