A flavorful and simple meal prep bowl featuring roasted potatoes, tender chicken, and fresh broccoli, perfect for busy weeknights.
Ingredients
- 4 lbs potatoes, chopped
- ⅔ cup parmesan, grated
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- ½ tsp oregano
- 1 tsp salt, divided
- 6 tbsp olive oil, divided
- ½ tsp black pepper
- 2 large broccoli heads, cut into florets
- 2 lbs chicken breast, skinless and boneless
- 2 tsp dried oregano
- 2 tsp dried parsley
- 1 tsp dried basil
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup ranch dressing
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the chopped potatoes with half the olive oil, parmesan cheese, and seasonings (garlic powder, onion powder, paprika, oregano, salt, and black pepper).
- Spread the seasoned potato mixture evenly on a baking tray. Roast for 35–40 minutes, flipping the potatoes halfway through.
- While the potatoes roast, prepare the chicken by seasoning it with dried oregano, dried parsley, basil, garlic powder, onion powder, salt, and black pepper.
- Heat the remaining olive oil in a skillet over medium heat. Add the seasoned chicken and cook for 6–8 minutes per side or until golden and cooked through.
- Toss the broccoli in a little olive oil and season with salt and black pepper. Roast it alongside the potatoes for the last 20–25 minutes, or steam until tender.
- Once cooked, divide the roasted potatoes, chicken, and broccoli into 6–8 meal prep containers. Drizzle with ranch dressing before serving.
