Description

A flavorful and simple meal prep bowl featuring roasted potatoes, tender chicken, and fresh broccoli, perfect for busy weeknights.


Ingredients

  • 4 lbs potatoes, chopped
  • ⅔ cup parmesan, grated
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp oregano
  • 1 tsp salt, divided
  • 6 tbsp olive oil, divided
  • ½ tsp black pepper
  • 2 large broccoli heads, cut into florets
  • 2 lbs chicken breast, skinless and boneless
  • 2 tsp dried oregano
  • 2 tsp dried parsley
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup ranch dressing


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the chopped potatoes with half the olive oil, parmesan cheese, and seasonings (garlic powder, onion powder, paprika, oregano, salt, and black pepper).
  3. Spread the seasoned potato mixture evenly on a baking tray. Roast for 35–40 minutes, flipping the potatoes halfway through.
  4. While the potatoes roast, prepare the chicken by seasoning it with dried oregano, dried parsley, basil, garlic powder, onion powder, salt, and black pepper.
  5. Heat the remaining olive oil in a skillet over medium heat. Add the seasoned chicken and cook for 6–8 minutes per side or until golden and cooked through.
  6. Toss the broccoli in a little olive oil and season with salt and black pepper. Roast it alongside the potatoes for the last 20–25 minutes, or steam until tender.
  7. Once cooked, divide the roasted potatoes, chicken, and broccoli into 6–8 meal prep containers. Drizzle with ranch dressing before serving.
