Description

Discover how to make a delicious and nutritious quinoa salad that is perfect for a healthy meal. Learn the best tips and tricks for creating a flavorful dish.

Ingredients

  • 2 cups water (480 ml)
  • 1 cup quinoa (200 g)
  • 1/4 cup vegetable oil (60 ml)
  • 2 limes, juiced
  • 2 teaspoons (10 ml) ground cumin
  • 1 teaspoon (5 ml) salt
  • 1/2 teaspoon (3 ml) red pepper flakes, or more to taste
  • 1 1/2 cups (360 ml) halved cherry tomatoes
  • 1 (15 ounce (425 g)) can black beans, drained and rinsed
  • 5 green onions, finely chopped
  • 1/4 cup (60 ml) chopped fresh cilantro
  • salt and ground black pepper to taste

Instructions

  1. Place the water and quinoa in a pot and bring them to a rolling boil. Lower the heat to medium-low, cover the pot, and let it gently cook until the quinoa is soft and the liquid is absorbed, which should take about 10 to 15 minutes. Allow it to cool.
  2. In the meantime, mix the vegetable oil, lime juice, cumin, salt, and red pepper flakes in a small bowl until well combined.
  3. In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, black beans, and chopped green onions. Drizzle the prepared dressing over the mixture and toss everything together to ensure it is evenly coated.
  4. Fold in the fresh cilantro and season with additional salt and black pepper according to your taste.
  5. You can serve the salad right away or place it in the refrigerator to chill before serving.

Notes

  • Enhance the flavor with freshly squeezed lime juice.
  • Increase red pepper flakes for a spicier kick.
  • Add diced avocado or bell peppers for extra texture.
