Ingredients
- 1 cup (240 ml) quinoa
- 1 lemon
- 1 teaspoon (5 ml) oregano
- 3/4 teaspoon (4 ml) kosher salt
- 1/4 teaspoon (1 ml) black pepper
- 1/4 cup (60 ml) extra virgin olive oil
- 4 scallions (white and green parts)
- 2 bell peppers (red, yellow, or orange)
- 1/2 cup (120 ml) pitted olives, drained
- 1 English cucumber
- 1/2 cup (120 ml) crumbled goat cheese
Instructions
- Prepare the quinoa. Thoroughly rinse the quinoa using cold water. Follow the instructions on the packaging to cook it.
- Create the dressing. While waiting for the quinoa to cook, squeeze the lemon for its juice and grate its zest into a mixing bowl. Add oregano, salt, and pepper. Gradually mix in the olive oil while tasting; modify the seasoning to suit your taste.
- Incorporate dressing into quinoa. When the quinoa is fully cooked and soft, transfer it to the bowl with the prepared dressing. Mix it well to ensure the quinoa absorbs the lemon dressing. Allow it to cool completely before adding the other ingredients.
- As the quinoa cools, prepare the vegetables by chopping them and adding them to the quinoa. Trim and chop the scallions, dice the bell peppers, and use a knife to cut the olives into smaller pieces. Slice the cucumber lengthwise, then into quarters, and chop into slices. Combine everything in the bowl and stir. Top with crumbled goat cheese and serve. You may optionally enhance it with fresh oregano leaves for garnish.
