Ingredients

  • 1 tbsp (15 ml) vegetable oil
  • 1 large red bell pepper
  • 1 large carrot
  • 1/2 bunch of green onions
  • 1 lb (454 g) boneless chicken
  • 1/2 small cabbage head
  • 1/2 large yellow onion
  • 16 oz (454 g) yakisoba noodles
  • 2 tsp (10 ml) sugar
  • 2 tbsp (30 ml) soy sauce
  • 2 tbsp (30 ml) vegetarian oyster sauce
  • 2 tbsp (30 ml) tomato ketchup
  • 4 tbsp (60 ml) vegetarian Worcestershire sauce

Instructions

  1. Mix together the ingredients for the sauce and set them aside.
  2. Chop all the vegetables to your preferred size for the dish. If the noodles need preheating, follow the package directions.
  3. In a hot pan, cook each type of vegetable separately for a few minutes to achieve a lightly browned appearance.
  4. In a skillet with oil, cook the chicken until it is browned on all sides.
  5. Combine the cooked vegetables and the sauce in the pan with the chicken.
  6. Add the noodles to the pan and stir everything together, cooking briefly before serving.

Notes

  • Marinate chicken in a soy sauce and sugar mixture for added flavor.
  • Stir-fry noodles separately for better texture before combining with vegetables and chicken.
  • Adjust sugar and soy sauce in the sauce to your taste preference.
