Ingredients
- 1 (595 g) can apple filling
- 1 cup (240 ml) vegetable oil, at room temperature
- 1/2 cup (100 g) white sugar
- 1/2 cup (100 g) packed dark brown sugar
- 2 eggs
- 1 tablespoon (15 ml) vanilla extract
- 2 cups (240 g) all-purpose flour
- 1 teaspoon (5 ml) baking soda
- 1 teaspoon (5 ml) ground cinnamon
- 1/2 teaspoon (3 ml) salt
- 3/4 cup (120 g) dried apricots
- 3/4 cup (90 g) chopped almonds
Instructions
- Set your oven to 350 degrees F (175 degrees C) and lightly coat a 9×5-inch loaf pan with grease.
- Use a potato masher to break up the apples in the filling in a medium bowl, then put it aside.
- In a large bowl, blend together the vegetable oil, white sugar, and dark brown sugar until smooth, then add the apple filling, eggs, and vanilla extract, mixing well until fully combined.
- In another bowl, sift together the flour, baking soda, cinnamon, and salt; gradually add this dry mixture to the apple mixture, stirring until incorporated. Mix in the dried apricots and chopped almonds.
- Transfer the batter into the greased loaf pan.
- Place it in the oven and bake until a toothpick inserted into the center comes out clean, approximately 1 hour.
- Allow the loaf to cool in the pan for about 15 minutes, then remove it and let it cool completely on a wire rack.
