Ingredients

  • 1 (595 g) can apple filling
  • 1 cup (240 ml) vegetable oil, at room temperature
  • 1/2 cup (100 g) white sugar
  • 1/2 cup (100 g) packed dark brown sugar
  • 2 eggs
  • 1 tablespoon (15 ml) vanilla extract
  • 2 cups (240 g) all-purpose flour
  • 1 teaspoon (5 ml) baking soda
  • 1 teaspoon (5 ml) ground cinnamon
  • 1/2 teaspoon (3 ml) salt
  • 3/4 cup (120 g) dried apricots
  • 3/4 cup (90 g) chopped almonds


Instructions

  1. Set your oven to 350 degrees F (175 degrees C) and lightly coat a 9×5-inch loaf pan with grease.
  2. Use a potato masher to break up the apples in the filling in a medium bowl, then put it aside.
  3. In a large bowl, blend together the vegetable oil, white sugar, and dark brown sugar until smooth, then add the apple filling, eggs, and vanilla extract, mixing well until fully combined.
  4. In another bowl, sift together the flour, baking soda, cinnamon, and salt; gradually add this dry mixture to the apple mixture, stirring until incorporated. Mix in the dried apricots and chopped almonds.
  5. Transfer the batter into the greased loaf pan.
  6. Place it in the oven and bake until a toothpick inserted into the center comes out clean, approximately 1 hour.
  7. Allow the loaf to cool in the pan for about 15 minutes, then remove it and let it cool completely on a wire rack.
