Ingredients

  • 6 bell peppers (6)
  • 3 cups chunky tomato sauce, divided (710 ml)
  • 5 onion, very thinly sliced (1/2)
  • 1 cup beef broth (240 ml)
  • 25 teaspoon (1 ml) red pepper flakes
  • 5 pounds lean ground beef (680 g)
  • 5 cups cooked rice (285 g)
  • 5 cup grated mozzarella cheese (50 g)
  • 25 cup chopped fresh cilantro (15 g)
  • 4 cloves garlic, minced
  • 2 teaspoons (10 ml) salt
  • 5 teaspoon (3 ml) ground cumin
  • 1 tablespoon (15 ml) chopped fresh cilantro, divided


Instructions

  1. Ensure you have all necessary components on hand. Set your oven to preheat at 375 degrees F (190 degrees C).
  2. Trim 1/2-inch from the tops of the peppers, removing stems and reserving them as lids. Excise the core and clear out any seeds. Slice a thin layer from the bottoms so they stand upright, and pierce 4 small holes in the bottoms for drainage.
  3. In a 9×13-inch baking tray, pour 2 ½ cups of the tomato sauce. Incorporate the onion, beef broth, and red pepper flakes, spreading the mixture evenly across the base.
  4. Arrange the bell peppers in an upright position in the tray.
  5. In a large mixing bowl, blend the ground beef, cooked rice, mozzarella cheese, 2 tablespoons of tomato sauce, 1/4 cup of chopped fresh cilantro, garlic, salt, and ground cumin.
  6. Gently fill the peppers with the beef mixture. Spread 1 tablespoon of tomato sauce on top of each filled pepper portion and cover with the reserved tops. Place a sheet of parchment paper loosely over the peppers and seal the dish tightly with foil. Position the dish on a baking sheet.
  7. Bake in the preheated oven for about an hour until the peppers are slightly tender. Remove the foil and parchment paper. Continue to bake for an additional 20 to 30 minutes until the meat stuffing is fully cooked and the peppers are soft, sweet, and tender.
  8. Garnish each pepper with 1/2 teaspoon of cilantro and drizzle with some of the juices from the pan.
