Description

Ingredients

  • 1 1/4 cup oat flour (160g)
  • 2 teaspoon baking powder (10ml)
  • 3/4 teaspoon salt (3.75g)
  • 1 tablespoon ground flax seeds (15ml)
  • 1 teaspoon ground cinnamon (5ml)
  • 1 cup mashed banana, ripe (240ml)
  • 1 cup pumpkin puree, unsweetened (240ml)
  • 1/4 cup vegan protein powder (30g)
  • 1/2 teaspoon apple cider vinegar (2.5ml)
  • 1 teaspoon vanilla extract (5ml)
  • 1/2 cup vegetable oil, melted (120ml)
  • 1 cup organic powdered sugar (200g)
  • 1/3 cup vegetable oil, melted (80ml)
  • pinch of salt
  • a few drops vanilla extract, optional
  • Ghost Eyes: mini vegan chocolate chips


Instructions

  1. Set your oven to 350°F and prepare a mini muffin or donut hole pan by thoroughly coating it with virgin coconut oil.
  2. Combine all the dry ingredients in a large bowl and whisk them together until well mixed.
  3. Place the wet ingredients in a blender and process until smooth, maintaining the lowest setting for at least one to two minutes to allow the flax seeds to expand.
  4. Transfer the blended wet mixture into the bowl with the dry ingredients and mix until everything is just combined.
  5. Bake at 350°F for approximately 11 minutes. Let the donut holes rest for a minimum of two minutes before taking them out of the pan.
  6. For the glaze, sift the powdered sugar into a small bowl and blend it with the melted oil using a whisk.
  7. Once the donut holes have cooled or have been refrigerated, dip them into the glaze and arrange them on a plate. Decorate with vegan chocolate chip ghost eyes. After the glaze has set, enjoy! Keep any remaining donut holes in the refrigerator.
  8. Optional: If desired, sprinkle sifted powdered sugar on top for a “powdery” ghost effect.
