Ingredients
- 1 1/4 cup oat flour (160g)
- 2 teaspoon baking powder (10ml)
- 3/4 teaspoon salt (3.75g)
- 1 tablespoon ground flax seeds (15ml)
- 1 teaspoon ground cinnamon (5ml)
- 1 cup mashed banana, ripe (240ml)
- 1 cup pumpkin puree, unsweetened (240ml)
- 1/4 cup vegan protein powder (30g)
- 1/2 teaspoon apple cider vinegar (2.5ml)
- 1 teaspoon vanilla extract (5ml)
- 1/2 cup vegetable oil, melted (120ml)
- 1 cup organic powdered sugar (200g)
- 1/3 cup vegetable oil, melted (80ml)
- pinch of salt
- a few drops vanilla extract, optional
- Ghost Eyes: mini vegan chocolate chips
Instructions
- Set your oven to 350°F and prepare a mini muffin or donut hole pan by thoroughly coating it with virgin coconut oil.
- Combine all the dry ingredients in a large bowl and whisk them together until well mixed.
- Place the wet ingredients in a blender and process until smooth, maintaining the lowest setting for at least one to two minutes to allow the flax seeds to expand.
- Transfer the blended wet mixture into the bowl with the dry ingredients and mix until everything is just combined.
- Bake at 350°F for approximately 11 minutes. Let the donut holes rest for a minimum of two minutes before taking them out of the pan.
- For the glaze, sift the powdered sugar into a small bowl and blend it with the melted oil using a whisk.
- Once the donut holes have cooled or have been refrigerated, dip them into the glaze and arrange them on a plate. Decorate with vegan chocolate chip ghost eyes. After the glaze has set, enjoy! Keep any remaining donut holes in the refrigerator.
- Optional: If desired, sprinkle sifted powdered sugar on top for a “powdery” ghost effect.
