Description

Ingredients

  • 1 package spice cake mix (approx. 432g)
  • 1-425g can pumpkin
  • 120ml (1/2 cup) water
  • 1 egg
  • 1 tub of cream cheese frosting (use about 3/4 of the tub)
  • 1 package vanilla almond bark (approx. 680g)


Instructions

  1. Combine the initial four ingredients in a bowl.
  2. Transfer the mixture into a 9×13 baking dish and cook following the instructions on the cake mix package.
  3. Allow the cake to cool completely.
  4. Break the cooled cake into crumbs and transfer them to a large bowl.
  5. Incorporate the cream cheese frosting into the crumbled cake and mix thoroughly. Chill the mixture in the refrigerator for no less than an hour.
  6. Use a small cookie scoop or melon baller to portion out the cake mixture.
  7. Shape the portions into small spheres. Return them to the refrigerator to maintain their cool temperature.
  8. Follow the package instructions to melt the almond bark. Take a few cake balls out of the fridge at a time and cover them with the melted bark.
  9. Place the coated cake balls on wax paper to set and embellish them as you prefer.

Notes

  • Allow the cake to cool completely before crumbling for the right cake ball texture.
  • Use a cookie scoop or melon baller for evenly sized cake mixture portions.
  • Chill the cake mixture in the refrigerator for at least an hour to facilitate shaping into balls.
