Ingredients

  • 2 kg / 2.4 lb pumpkin (any type) OR butternut squash, unpeeled weight
  • 1 onion, sliced (white, brown, yellow)
  • 2 garlic cloves, peeled whole
  • 3 cups (720 ml) vegetable or chicken broth/stock, low sodium
  • 1 cup (240 ml) water
  • Salt and pepper
  • 1/2 – 3/4 cup (180 ml) milk


Instructions

  1. Slice the pumpkin into pieces about 3cm / 2.25″ thick. Remove the peel and scoop out the seeds. Cut the flesh into chunks approximately 4cm / 1.5″ in size.
  2. Combine the pumpkin chunks, sliced onion, whole garlic cloves, broth, and water in a pot. The liquid will not fully submerge the pumpkin. Heat until boiling without a lid, then lower the heat and let it simmer rapidly until the pumpkin becomes soft enough to pierce with a butter knife—this will take around 10 minutes.
  3. Take the pot off the heat and use an immersion blender to puree the mixture until smooth.
  4. Add salt and pepper to taste, and mix in the milk, ensuring that you do not boil the soup after adding it to prevent curdling.
  5. Serve the soup by ladling it into bowls, drizzle a little milk on top, and sprinkle with pepper and parsley if desired. Enjoy with some crusty bread on the side!
