Description

A nutritious twist on classic Rice Krispies treats that infuses protein powder for a healthier snack.


Ingredients

  • 5 cups Rice Krispies or crispy rice cereal
  • 2 tablespoons milk (regular or almond milk)
  • 1/2 cup vanilla-flavored protein powder
  • 4 tablespoons salted butter
  • 10.5-ounce bag mini marshmallows
  • 1 teaspoon vanilla extract
  • Sprinkles (optional)


Instructions

  1. Line a 9×9 inch pan with foil or parchment paper, then grease it with butter or nonstick cooking spray.
  2. In a small bowl, whisk together the milk and protein powder until combined and smooth. Set aside.
  3. Bring a large pot to medium heat and add the butter. Allow it to melt completely.
  4. Reduce the heat to low and add the mini marshmallows. Stir until melted, then add the vanilla extract and milk mixture.
  5. Remove the pot from heat and stir in the Rice Krispies until they are completely coated with the marshmallow mixture.
  6. Transfer the mixture to the prepared pan and gently press it in. Optionally top with sprinkles.
  7. Allow the treats to rest for 30-60 minutes, then slice into squares and enjoy!

Notes

Use fresh mini marshmallows for best results. You can also add mix-ins like chocolate chips or dried fruits for added flavor.
