Delicious and nutritious cookies packed with protein, perfect for a snack or breakfast on-the-go.
Ingredients
- 6 tbsp unflavored protein powder
- 3 tbsp gluten-free protein oats (or regular old-fashioned oats)
- 1/4 cup natural peanut butter (or any nut butter of choice)
- 2 tbsp maple syrup
- 2 tbsp almond milk (or your milk of choice)
- 1 tbsp vanilla extract
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/4 cup chocolate chips
- 1-2 tbsp M&M type candies (optional)
Instructions
- Preheat your oven to 350°F and line a cookie sheet with parchment paper.
- In a large mixing bowl, combine all ingredients except for the chocolate chips and optional candies.
- Use a fork to mix everything together until a thick batter forms and you see no dry ingredients left.
- If using, fold in the chocolate chips or candies gently to distribute evenly.
- Scoop the dough using an ice cream scoop to create two large cookies (or four smaller ones), leaving ample space on the baking sheet.
- Gently press down on the scoops to flatten them slightly.
- Bake for 10-12 minutes until the cookies are golden brown and set.
- If needed, pop the cookies in the fridge for five minutes to help them set.
Notes
For a richer flavor, experiment by adding a pinch of cinnamon or some crushed nuts. Store cookies in an airtight container for up to a week at room temperature.
