Description

Delicious and nutritious cookies packed with protein, perfect for a snack or breakfast on-the-go.


Ingredients

  • 6 tbsp unflavored protein powder
  • 3 tbsp gluten-free protein oats (or regular old-fashioned oats)
  • 1/4 cup natural peanut butter (or any nut butter of choice)
  • 2 tbsp maple syrup
  • 2 tbsp almond milk (or your milk of choice)
  • 1 tbsp vanilla extract
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup chocolate chips
  • 1-2 tbsp M&M type candies (optional)


Instructions

  1. Preheat your oven to 350°F and line a cookie sheet with parchment paper.
  2. In a large mixing bowl, combine all ingredients except for the chocolate chips and optional candies.
  3. Use a fork to mix everything together until a thick batter forms and you see no dry ingredients left.
  4. If using, fold in the chocolate chips or candies gently to distribute evenly.
  5. Scoop the dough using an ice cream scoop to create two large cookies (or four smaller ones), leaving ample space on the baking sheet.
  6. Gently press down on the scoops to flatten them slightly.
  7. Bake for 10-12 minutes until the cookies are golden brown and set.
  8. If needed, pop the cookies in the fridge for five minutes to help them set.

Notes

For a richer flavor, experiment by adding a pinch of cinnamon or some crushed nuts. Store cookies in an airtight container for up to a week at room temperature.
