Description

A nutritious and delicious protein-packed banana bread perfect for breakfast, snacks, or dessert.


Ingredients

  • 2 large ripe bananas, mashed
  • 4 eggs
  • 1 cup low-fat cottage cheese
  • 2 tsp vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda


Instructions

  1. Preheat your oven to 350°F and prepare your loaf pan by greasing or lining it.
  2. Blend the bananas, eggs, cottage cheese, and vanilla extract until smooth.
  3. Pour the blended liquid ingredients into a large mixing bowl.
  4. In a separate bowl, whisk together the flour, sugar, baking powder, and baking soda.
  5. Gradually pour the dry ingredients into the wet mixture and fold gently until fully combined.
  6. Transfer the batter to your prepared loaf pan, smoothing the top.
  7. Bake at 350°F for 55 minutes, covering with aluminum foil after 35 minutes if necessary.
