Ingredients
- 2 large ripe bananas, mashed
- 4 eggs
- 1 cup low-fat cottage cheese
- 2 tsp vanilla extract
- 1 and 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
Instructions
- Preheat your oven to 350°F and prepare your loaf pan by greasing or lining it.
- Blend the bananas, eggs, cottage cheese, and vanilla extract until smooth.
- Pour the blended liquid ingredients into a large mixing bowl.
- In a separate bowl, whisk together the flour, sugar, baking powder, and baking soda.
- Gradually pour the dry ingredients into the wet mixture and fold gently until fully combined.
- Transfer the batter to your prepared loaf pan, smoothing the top.
- Bake at 350°F for 55 minutes, covering with aluminum foil after 35 minutes if necessary.
- Allow to cool completely before slicing and enjoy!
Notes
For added texture, consider folding in chopped nuts or chocolate chips. Use very ripe bananas for maximum sweetness.
