Ingredients
- 4 medium potatoes, peeled and chopped
- 2 carrots, chopped
- 1 onion, chopped
- 2 stalks of celery, chopped
- 3 cloves of garlic, minced
- 1 lb sausage, sliced
- 4 cups vegetable broth
- 1/4 cup fresh herbs (parsley or dill)
- Salt, to taste
- Black pepper, to taste
Instructions
- Peel and chop the potatoes, carrots, onion, and celery.
- In a large pot, sauté the onion and garlic until translucent.
- Add the chopped vegetables and sausage to the pot, cooking until the sausage begins to brown.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and let simmer until the vegetables are tender.
- Season with salt, pepper, and fresh herbs before serving.
