Description

A heartwarming soup filled with dried beans, sausage, and vibrant vegetables, perfect for cozy dinners.


Ingredients

  • 1 pound dried beans (black or pinto)
  • 1 pound sausage
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, diced
  • 4 cups chicken or vegetable broth
  • 2 bay leaves
  • 1 tablespoon smoked paprika
  • Salt and pepper to taste


Instructions

  1. Soak the dried beans overnight in cold water, then drain.
  2. In a large pot over medium heat, brown the sausage until crispy.
  3. Add the chopped onion and minced garlic; cook until softened.
  4. Toss in the diced carrots, celery, and bell pepper; sauté for a few minutes.
  5. Add the drained beans, broth, bay leaves, smoked paprika, salt, and pepper.
  6. Bring to a gentle boil, then reduce heat and cover, simmering for 1-2 hours until beans are tender.
  7. Remove bay leaves before serving and adjust seasoning as needed.
  8. Garnish with fresh parsley before serving.

Notes

For extra flavor, add a splash of fresh herbs before serving. Diced potatoes or cooked quinoa can also be added for a heartier soup.
