Ingredients
- – 1 pound (454 g) ground beef, browned and drained
- – 3 large russet potatoes, peeled and chopped
- – 3 large carrots, peeled and chopped
- – 1 small onion, chopped, or half of a medium onion
- – 1 1/2 teaspoons (8 ml) minced garlic
- – 2 cups (480 ml) beef broth
- – 6 ounces (170 g) tomato paste
- – 14.5 ounces (411 g) petite diced tomatoes in juice, canned, include tomato juice don’t strain
- – 2 teaspoons (10 ml) sugar
- – 2 teaspoons (10 ml) Italian seasoning
- – 1 1/2 teaspoons (8 ml) garlic salt
- – 1 teaspoon (5 ml) pepper
- – 1 teaspoon (5 ml) onion powder
- – Parsley, optional garnish
Instructions
- In a large pan, cook the ground beef until it is fully done, then remove any leftover fat. Transfer the browned beef to the base of a slow cooker.
- Cut the potatoes, carrots, and onion into pieces roughly an inch in size, small enough to fit on a spoon.
- Place the cut potatoes, carrots, onion, garlic, beef broth, tomato paste, and canned diced tomatoes with their juice into the slow cooker. Add the sugar, Italian seasoning, garlic salt, black pepper, and onion powder to the mix.
- Mix all the ingredients thoroughly in the slow cooker, then secure the lid.
- Set the slow cooker to a low setting and let it simmer for 6 hours, or choose a high setting for a 4-hour cook time. The potatoes should be tender enough to pierce with a fork when ready. Serve and savor!
