Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup shelled pistachios, finely chopped
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup plain yogurt
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, mix flour, chopped pistachios, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, vegetable oil, yogurt, milk, vanilla extract, and lemon zest until combined.
  4. Fold the wet ingredients into the dry ingredients until just mixed. Do not overmix.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake for 50-60 minutes. Check doneness by inserting a toothpick; it should come out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  8. Prepare a glaze by mixing powdered sugar with lemon juice until smooth. Drizzle it over the cooled bread.
  9. Garnish with additional chopped pistachios if desired.

Notes

Use room temperature ingredients for even mixing. Consider toasting the pistachios for enhanced flavor.
