Ingredients
- ⅛ teaspoon salt
- ½ cup softened butter
- 1 cup crushed pineapple, drained (liquid reserved)
- 2 large eggs
- 1 ½ cups all-purpose flour
- ¼ cup pineapple liquid (from crushed pineapple can)
- ¼ cup granulated sugar
- 2 tablespoons milk
- 2 teaspoons baking powder
- 2 tablespoons pineapple liquid (from crushed pineapple can)
- 1 cup confectioners’ sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Sift the flour, salt, and baking powder together in a bowl.
- In another large mixing bowl, beat together the softened butter and granulated sugar until smooth, then add the eggs and mix well.
- Gradually add the reserved pineapple liquid and the dry ingredients alternately while mixing until you achieve a smooth batter.
- Stir in the milk and crushed pineapple until well combined.
- Pour the batter into the greased loaf pan and bake for 50-55 minutes, checking for doneness with a toothpick.
- Allow the bread to cool for 10-15 minutes before transferring it to a cooling rack.
- For the glaze, mix confectioners’ sugar, vanilla extract, and the remaining pineapple liquid, and drizzle over the cooled bread.
