Description

A sweet and tropical treat combining crushed pineapple and creamy butter, perfect for breakfast or an afternoon snack.


Ingredients

  • ⅛ teaspoon salt
  • ½ cup softened butter
  • 1 cup crushed pineapple, drained (liquid reserved)
  • 2 large eggs
  • 1 ½ cups all-purpose flour
  • ¼ cup pineapple liquid (from crushed pineapple can)
  • ¼ cup granulated sugar
  • 2 tablespoons milk
  • 2 teaspoons baking powder
  • 2 tablespoons pineapple liquid (from crushed pineapple can)
  • 1 cup confectioners’ sugar
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Sift the flour, salt, and baking powder together in a bowl.
  3. In another large mixing bowl, beat together the softened butter and granulated sugar until smooth, then add the eggs and mix well.
  4. Gradually add the reserved pineapple liquid and the dry ingredients alternately while mixing until you achieve a smooth batter.
  5. Stir in the milk and crushed pineapple until well combined.
  6. Pour the batter into the greased loaf pan and bake for 50-55 minutes, checking for doneness with a toothpick.
  7. Allow the bread to cool for 10-15 minutes before transferring it to a cooling rack.
  8. For the glaze, mix confectioners’ sugar, vanilla extract, and the remaining pineapple liquid, and drizzle over the cooled bread.
